Strawberry Watermelon Smoothie

We are officially moved into our new home! To think three weeks ago we were packing boxes wondering where we would be living. Then in the next moments we get the go ahead on the house we love, pack faster, hire movers, and now I am sitting in my new living room. The sliding door is wide open, it’s raining, and I feel at home. We moved two weeks ago over the weekend with the perfect weather. The following week I had the tv show for Sabra and National Hummus Day, and then my father in law came to visit to celebrate his and Brian’s birthday. That was the weekend before last, and this I past Friday morning I woke feeling unsettled, weird, and needed to remedy this feeling asap.

While I love our new home, new neighborhood, and landlords, I felt weird. I know moving can be overwhelming, especially so abruptly, but this was unwavering. I got a massage Friday, after taking the week off of work to mend this un-grounded feeling. The drive home was the enlightening moment that revealed a remedy to this feeling. I needed to cook our first meal together with Brian. Plain and simple home is where we are with our kitties, cooking and eating a meal together. I hugged Brian tight when he got home, and told him about my unsettled feeling, he felt the same. We were so excited to have a moment to cook a simple meal together. He grilled chicken while I chopped some vegetables, the most simple meal. It took away that feeling, it made us feel at home in the home that we already love. It and the next morning of quiet coffee time made this our home, finally.

No looking back, just feeling grateful that a simple meal prepared can make all the difference in the world. And it did. For that I am happy and full.

I realize that has nothing to do with a Strawberry Watermelon Smoothie, and that is ok with me. I wanted to share this with you! It is relevant at some point lol. Over the weekend we were talking about getting back to our daily smoothie regimen and I asked Brian what flavor he wanted to start off with. He told me he’d been getting his smoothie fix, sans the greens, at a local smoothie shop by work. His favorite was the Strawberry Watermelon Smoothie flavor. Naturally I made it at home for us to enjoy and get back to feeling normal and grounded. Cheers to that. This smoothie has beautiful crisp Organic watermelon from California, deep red gorgeous strawberries from Mt. Hood, Oregon, and honey from Portland, Oregon. These ingredients make this smoothie the perfect morning treat to celebrate this home!

Strawberry Watermelon Smoothie

Makes 3-16 oz smoothies

Ingredients:

2 cups fresh or frozen Strawberries, hulled

2 cups fresh Watermelon, chopped

1-16oz can unsweetened Coconut Milk, not water

2 teaspoons Honey, I use Bee Local

3 cups fresh Spinach, optional

Method:

1. Place all ingredients in a blender, and blend until smooth. Enjoy immediately or place in a glass with a lid tightly secured for the next day.
